A aconitase ou aconitato hidratase (número EC:4.2.1.3) é un encima que cataliza a isomerización estereoespecífica do citrato a isocitrato por medio do intermediato cis-aconitato no ciclo do ácido cítrico ou de Krebs.[3][4][5]
